Yamitsuki Shio Cabbage

If you were looking to eat half a head of cabbage in one sitting, you’ve come to the right place.

Yamitsuki Shio Kyabetsu, roughly translates to Addictive Salted Cabbage.

And it’s exactly that. Super straightforward, only 6 ingredients. I typically just eyeball it! Taste as you go, if you want it more salty add more salt, if you like more pepper add more black pepper, if you like that sesame taste, add more sesame oil.

Notes:

  • This can keep for 2-3 days, any longer the cabbage starts to wilt/ break down. Think of it like a salad! Just make as much as you can eat, as i find it better with that crunch!

  • Can pair with Moromi Miso (this is what is looks like, although I usually buy it when I’m in Japan) which is NOT the same as regular Miso paste.

Let’s make it!

Yamitsuki Shio Cabbage:

  • 1/2 head cabbage

  • 1 large pinch kosher salt (about 1/2 tsp)

  • 1 small pinch ground black pepper

  • 1-2 small cloves grated garlic

  • 1 tbsp toasted sesame seeds, ground

  • 1/2 tbsp toasted sesame oil

Remove the external leaves from the cabbage. Chop the cabbage in half, and into wedges.

Chop into squares/ bite sized pieces. Discard the core and base.

Transfer to a colander and rinse under cold water to get rid of any dirt. Shake to get rid of excess water and dump into a towel. Thoroughly pat dry.

Place the cabbage in a large bowl. Add 1 large pinch of salt and massage with your hands to help break down the cabbage. Let it sit for 5 minutes.

Using a microplaner or a oroshigane, finely grate your garlic.

The finer the garlic, the more flavour it produces. if you don’t have a grater, crush the garlic with the back of your blade, and chop it very finely. Use the edge of your blade to grind it down into a “paste-like” consistency.

Using a suribachi, mortor and pestle, or coffee grinder, grind the sesame seeds (or place the sesame seeds in a ziploc and roll over them with a rolling pin) and add them to the bowl with the cabbage along with the grated garlic, ground black pepper and sesame oil.

Use your hands to massage the cabbage and season.

This can be eaten right away! Think of it like a salad.
