Recipe:

  • 1 grey or green zucchini

  • 1 tsp salt

  • 2 tbsp flour

  • 1 egg

  • 2 tbsp oil, to fry

Wash and dry the zucchini. Slice into 1/4” thick rounds.

Place the slices on a paper towel and spinkle with salt. Flip and do the same on the other side. Let them sit for 5 minutes to draw out the water, and dab them with a paper towel to dry them.

Transfer your zucchini to a bowl and add the flour. Toss to coat.

In a small bowl, add one egg and beat until no streaks of whites remain.

Meanwhile, place a fry pan over medium heat and add 2-3 tbsp of oil.

To cook: Take a zucchini, shake off the excess flour and dip in your egg. Place it in your hot pan. Repeat with remaining zucchini slices.

Pan fry until golden, 2 mins each side. Remove from the heat and place on a paper towel to soak up grease.

Serve right away!
