Broccoli Muchim

Recipe:

  • 1 head broccoli, florets

  • 2-3 cups water (for boiling)

  • 1 tsp salt (for boiling)

  • 1.5 tbsp sesame oil

  • 1 tbsp vinegar

  • 1/2 tsp fine salt

  • 1/2 tsp sugar

  • 2 cloves minced garlic

  • 1 chopped green onion

Chop broccoli into smaller, bites sized florets. Place in a colander and wash away and dirt.

In a medium pot, add 2 cups of water and the salt. Bring to a boil.

Once boiling, add your broccoli and cook for 30-45 seconds until tender and a brighter shade of green. Dump out the water and place your broccoli in an ice bath, or run until cold water to stop the cooking.

In a medium bowl combine the remaining seasoning ingredients, sesame oil, vinegar, 1/2 tsp salt and sugar. Mix vigorously with a spoon until the liquids homogenize.

Add your broccoli and chopped gree onion to the bowl and stir to coat with the dressing.

Serve right away. This dish is best eaten within two days, and stored in an airtight container in the fridge.
